There is a sparkling wine for use in cocktails which is called "mixing Champagne." This lower quality of Champagne is rarely the right choice for a Champagne drink - it is called mixing Champagne because it is not fit to be served straight. Because of this, we only very rarely recommend its use. Despite its being used as a mixer, most champagne cocktails have simple enough additives that the
quality of the champagne remains important, and many noticeably benefit from a finer Champagne.
The best mixing champagne is always brut.
